Quick and Healthy Coconut Chia Seed Pudding with Mixed Berries

Ingredients:

  • 3 tbsp chia seeds
  • 250ml coconut milk (can substitute with almond milk or regular milk)
  • 1 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • Fresh mixed berries (strawberries, blueberries, raspberries)
  • Toasted coconut flakes (optional, for garnish)
  • Mint leaves (optional, for garnish)

Instructions:

  1. Prepare the chia seed pudding
    In a mixing bowl, combine chia seeds, coconut milk, maple syrup, and vanilla extract. Stir well to ensure the chia seeds are fully incorporated. Let it sit for 5 minutes, then stir again to break up any clumps of chia seeds.
  2. Refrigerate
